Chishan Ramen (濟善老麵), Serving Only 10 Bowls of Extremely Black Chicken Ramen One Day in Taipei, Taiwan!


In the evening of Jun. 7, 2020, my friends and I would like to celebrate the 1st success of recall vote in Taiwan's political history. Therefore, we headed to Chishan Ramen (濟善老麵) near Wanhua Railway Station, Taipei, Taiwan.


We arrived at Chishan Ramen (濟善老麵) at its opening time, 17:30. It rain a lot that day, so we didn't see too many customers yet. Soon we entered the restaurant and had our seats.


Chishan Ramen (濟善老麵) is famous for the ramen based on chicken broth. It also served the dry chicken ramen (老雞拌麵) without soup and the extremely black chicken ramen 2.0 ver. (極黑羽2.0烏骨雞拉麵) only 10 bowls a day!


I ordered a limited bowl of extremely black chicken ramen 2.0 ver. at 380 TWD (= 12.83 USD). The extra noodles were free! My friends ordered the chicken ramen (老雞湯麵) and dry chicken ramen (老雞拌麵). Their prices were both 200 TWD (= 6.75 USD) per bowl.


Additionally, we ordered the following side dishes:
Century eggs with peeled chili peppers (剝皮辣椒皮蛋) at 50 TWD (= 1.69 USD)
Chicken skin crackers (雞皮仙貝) at 40 TWD (= 1.35 USD)
Crispy tofu (脆皮豆虎) at 40 TWD (= 1.35 USD)


Personally speaking, I didn't like century eggs, but the century eggs here had less ammonia odor. With the peeled chili peppers and thick soy sauce, the century eggs here were delicious and springy.


Another side dish was the chicken skin crackers (雞皮仙貝). The chicken skin crackers (雞皮仙貝) were very crispy! With the sour and salty sauce, it was unique and appetizing side dish.


Our last side dish was the crispy tofu (脆皮豆虎). I loved it the most!


The tofu and bonito flakes were deep fried together. The freshly fried tofu with the dancing bonito flakes really looked and smelled mouth-watering!


With the salty & sweet sauce and the smash radish, the deep fried tofu here really impressed me so much!


One of my friend's dry chicken ramen was firstly served. The toppings were the scallions, sous vide chicken and poached egg. They all looked so mouth-watering!


The other friend ordered the chicken ramen. The soup of ramen was the clear chicken soup.


The chef recommended my friend to enjoy the original 1st third of ramen soup. and then have the remaining two thirds with the fruit wine. The yuzu pepper (柚子胡椒) was for the last third. Customers could enjoy the 3 phases of ramen!


The last was my extremely black chicken ramen 2.0 ver. The ramen looked pretty black with the green scallions. The colors were special for food!


At first, I tried a bite of noodles. I thought the noodles here were thin and slightly soft, but I found they were slightly springy after putting them into my mouth. Moreover, their ability to absorb the soup was really good!


The sous vide black chicken was quite tender. Its texture was firmer than the common chicken, and its aroma of chicken was richer!


Here was a shiitake mushroom in the ramen. The shiitake mushroom was fresh and tasty. It made the whole ramen even more delicious!


The eggs here consisted of the half black century egg and the half soft-boiled egg.


Due to bamboo charcoal, the black chicken soup looked even darker!


The chicken soup tasted fresh and mild with the rich chicken aroma. I couldn't help but enjoy the soup one spoon after another!


The chef also recommended me to smashed the century egg and mixed it into the remaining half of soup. The century egg made the soup more flavorful!


The price of the limited extreme black chicken ramen 2.0 ver (極黑羽2.0烏骨雞拉麵) is much more expensive than the other options at Chishan Ramen (濟善老麵), but I still think it's absolutely worth a try!

Additionally, not like the common cash-only ramen restaurant, customers can pay their bills with credit cards via JKO Pay here. It's more convenient for customers!
