Boss Fang's Noodles (方老大麵), the Popular Noodle Restaurant with Locals in Hangzhou, Zhejiang, China Est. 1983


On Aug. 9, 2019, after I visited the West Lake in Hangzhou, Zhejiang, China, I took the bus to Boss Fang's Noodles (方老大麵), the popular noodle restaurants with locals in Downtown Hangzhou.

Although I arrived here at almost its closed time, here were still full of customers inside the restaurant.



Its signature was Pian Er Chuan (片兒川), Hangzhou's special noodle soup.


But I'd like to try the another local speciality, the fried swamp eel noodles with shrimps (虾爆鳝面). But it was already sold out that day, so I just ordered the deep-fried fish noodles (酥鱼面) at 22 CNY (= 95 TWD).


Customers had to place their orders before being seated.


The fried soup smelled very good. It also tasted rich but slightly oily.


The deep-fried fish was good-smelling, but customers had to watch out the fish bone.


The texture of noodles was slightly firm.


With some chili sauce, the noodles tasted better!


Although the environment at Boss Fang's Noodles (方老大麵) was a little crowded, the flavor here was still very good. It was the only shame that I couldn't try Hangzhou's local speciality, the fried swamp eel noodles with shrimps (虾爆鳝面).
