Ramen Houhana (らぁ麺 鳳華), Serving the Extremely Delicious, Mild and Rich Chicken Ramen in Neihu, Taipei, Taiwan!


In the evening of Sep. 27, 2019, my friends and I met at MRT Xihu Station, Taipei, Taiwan. We were going to the new open ramen restaurant, Ramen Houhana (らぁ麺 鳳華), for dinner on Lane 411 of Neihu Rd.

Ramen Houhana (らぁ麺 鳳華) was still in its trial run. We couldn't find its location on Google Map then.


The mural inside the restaurant look like the ukiyo-e. I loved it so much!


It rained cats and dogs that evening. Here were not many customers when we entered the restaurant.


We could classified the ramen here into clear chicken ramen, rich chicken ramen and rich chicken ramen with foam by soup.


One of my friends ordered a bowl of clear chicken ramen with extra sliced sous vide pork. We could see so many slices of sous vide pork!


The other friend ordered a bowl of rich chicken ramen with extra sliced sous vide pork. Compared with the clear chicken ramen, its soup looked creamier.



Mine was a bowl of rich chicken ramen with foam at 280 TWD (= 9.01 USD). Additionally, I ordered a soft-boiled egg at 30 TWD (= 0.97 USD), but I didn't ordered the extra sliced pork.



The saltiness of soup I chose was normal. The rich chicken soup with foam looked milky. It tasted rich, smooth, mild but not too greasy. Amazingly, it had a little aroma of milk even without any dairy products! The soup tasted even better with the cubed red onion.



Here were 3 kinds of sliced meats topped on the noodle soup.


The 1st one was sliced sous vide pork. Its doneness stroke a perfect balance. Its thickness was good for customers. Its texture was also quite tender!


The 2nd one was sliced sous vide chicken breast. It was also so tender, juicy and tasty!


The 3rd one was chicken thigh. It smelled good with a little aroma of citrus. The ratio of fat and protein was so perfect!



The runniess of egg yolk inside the soft-boiled egg was impeccable!


The texture of noodles I chose was firm. The default noodles were the thick noodles made with bonito powder. The mouthfeel of thick noodles was quite good! The surface of noodles absorbing the soup had the slight bonito aroma. Its thick noodles were not only unique but also mouth-watering!


Its extra noodles for free were the thin noodles. The texture of thin noodles I chose was also firm!


Its thin noodles also tasted great with the rich chicken soup with foam. In fact, the thick and thin noodles have its own advantages. Personally speaking, I preferred the thick noodles with bonito powder to the thin noodles.


After finishing the ramen, I could see the image, a phoenix, related to the name of Ramen Houhana (らぁ麺 鳳華) on the edge of bowl.

After we all finished the pretty satisfying ramen, we left Ramen Houhana (らぁ麺 鳳華) soon because too many customers were still queueing.
