Mizutaki Nagano (水炊き長野), the Delicious Local Speciality in Fukuoka, Japan!


In the evening of Sep. 19, 2018, my friends and I had dinner together in Downtown Fukuoka, Japan. That evening we were going to enjoy Fukuoka's local speciality, Mizutaki (水炊き, chicken hot pot). We visited a time-honored restaurant, Mizutaki Nagano (水炊き長野), which had been established for over 90 years! We walked about 10 minutes there from Nakasukawabata Station, Fukuoka.

That day we ordered its signature, Mizutaki (水炊き, chicken hot pot), based on boned chicken chops and chicken balls. Its price was 2,800 JPY (= 25.99 USD) per person.


Its side dish was the vinegared chicken gizzard. The texture of gizzard was a little firm and rubbery, but it tasted a little sour but very appetizing!



Its sauce was golden vinegar soy sauce. It tasted obviously sour.


The seasonings were minced scallions and chili sauce.


The fresh raw chicken was heated in beige and turbid chicken soup. The very hot cooked chicken became even more delicious after dipped with vinegar soy sauce.


The chicken soup smelled so fragrant and tasted mild and smooth!


After almost finishing the bone chicken chops, the next dish was chicken balls.


The servant professionally put bite-sized raw ground chicken into the chicken hot pot by chopsticks to heat.


We watched the chicken balls became boiled and white from raw and beige. We were all looking forward to them!


The chicken balls had the aroma of chicken soup. The chicken ball with the minced chicken cartilage tasted very delicious with the vinegar soy sauce!


Next, it was the turn of vegetable dish. The vegetable dish consisted of tofu, wheat gluten, konjac silk, crown daisies, leeks and cabbages.


The servant carefully put everything on the dish into the hot pot.


Every food material was very good at absorbing the soup!


For example, the tofu and wheat gluten were very matched with its chicken soup!


Because we were all so full, we didn't order additional rice for zosui (雑炊). I heard that the zosui (雑炊) was great!

The mizutaki (水炊き, chicken hot pot) at Mizutaki Nagano (水炊き長野) was really scrumptious, but its price was relatively high. A person had to pay at least 3,000 JPY (= 27.84 USD) including VAT for a meal. But I'd still like to strongly recommend to try Fukuoka's speciality at Mizutaki Nagano (水炊き長野)!
