On Oct. 6, 2017, almost the end of our journey around Taiwan, my companion and I visited our mutual friend in Hsinchu, Taiwan for dinner together!

But it was at 20:30, most of restaurants in Hsinchu, Taiwan were already closed.

We went to Shi Tzi Beef Noodles (璽子牛肉麵) in a hurry. Luckily, it hadn't been closed, but we were the last batch of customers!

Due to late arrival, we didn't have this opportunity to try its famous Jinbing(斤餅).

Therefore, we only oredered the clear stewed beef noodles and fuqi feipian(夫妻肺片, husband and wife lung pieces), but when fuqi feipian was served, I just knew that it was unrelated to cow lungs at all! It consisted of beef 100%, and it tasted spicy with a little numbing effect due to Sichuan peppers! But it cost us 80 TWD (= 2.65 USD) per dish.

The next one was the clear stewed beef noodles at 120 TWD(=3.97 USD) per bowl! Shi Tzi Beef Noodles (璽子牛肉麵) was not like most beef noodle restaurants! It only served clear stewed beef noodles without the common beef noodles, braised beef noodles!
I thought cooking clear stewed beef noodles was more difficult than braised beef noodles because clear stewed beef noodles tasted lighter. You might easily taste gamey and yucky if the cook hadn't handle the beef well.

But the beef noodle soup here was delicate and perfectly matched with the umami beef! Without the gamey and too rich vegetable taste, the soup stroke a perfect balance. The soup was quite umami!

The noodles were wider than ordinary noodles. I liked its noodles so much. The noodles tasted a little al-dente!

The stewed beef was also savory, tender and almost melted as soon as putting into mouth!

If you'd like to change the flavor, you could dip the spicy sauce with beef or noodles and make the flavor diverse!
For me, the clear stewed beef noodles at Shi Tzi Beef Noodles (璽子牛肉麵) was quite satisfying! What a shame we didn't have the opportunity to try its another popular dish, Jinbing(斤餅). I'd like to go to Shi Tzi Beef Noodles (璽子牛肉麵) earlier for Jinbing(斤餅) next time.
